My cravings for sweet are usually managed with couple of Dates + Ghee or Fresh Coconut with Jaggery! :-) Sometimes, I go bit extra mile and try this recipe!
We enjoyed this during 8th Anniversary celebrations for Sundar Yoga.

This is a simple recipe with minimal steps and simple ingredients! There are in total 4-5 ingredients including the garnishing!
My favorite ingredient is the Indian Sweet Potato- Ratala/Ratalu. This humble edible roots are full of good nutrients! Sweet potatoes contain macronutrients such as starch, dietary fiber, protein as well as an extensive range of micronutrients that includes minerals, vitamins, provitamin A, flavonoids and coumarins. They are an excellent source of vitamin A, which helps keep eyesight sharp and skin clear. They also contain beta carotene, which is converted into vitamin A in the body. They’re a great source of iron!

4 medium size Sweet Potatoes
1 cup broken Cashews
1 to 1.5 cup pitted Dates
1/4 cup Almond milk
For garnishing - Saffron, Cardamom powder, Chopped Almonds, Pistachios
Prep:
Soak the Dates in little lukewarm water for ~3-4 hours
you can add more dates if you like it sweeter
Add few saffron strands to 1 tbs of the almond milk and set aside
Steps:
Peel the sweet potatoes and cut them in pieces to grind in the Food Processor (1 inch by 1/2 inches)- Small enough for your grinder to work
Grind the soaked dates with the water, sweet potatoes, and cashews
Pour the mixture to a deep pan/pot (clay pot works too)
Start the flame/burner at medium flame/heat.
Add the Almond milk without saffron, and keep stirring. The mixture will need to be reduced and cooked.
Once cooked, let it cool down and mix in the saffron almond milk
Garnish with chopped Almonds and Pistachios
Note: You can enjoy this warm or cold depending on the weather and liking.
